I hate making pastry. Frozen butter, ice cold water by tsp fulls. Blah! I found this recipe where you don't have to do all that. It makes the best pastry and I have never had it fail. The trick is to not mix it too much or it will shrink when you bake it. 100 g softened butter, 75 g icing sugar, 1 egg, 230 g flour. Beat icing sugar and butter for 5 minutes, add egg and beat another minute. Add flour and mix just until combined. Refrigerate for 4 hours before using. That's it!

Craving shortbread? This is so easy. Just 3 ingredients. It really does melt in your mouth. Drool worthy. A favourite of friends and tea party guests. 1 cup butter (softened) 1/2 cup of icing sugar 1 1/2 cups of flour Add all ingredients to mixer and mix on high speed for 10 minutes (dough will change to a lighter colour). Put dough into piping bag with large star tip. Squeeze out onto parchment paper or drop by using a melon baller onto paper. Bake at 325 for approx 10 minutes. Cookies will brown quickly along edge so watch them closely. Cool and enjoy.
